Hey coffee comrades, Shacoco Blend is back. It is available for the walk-in customers at Shahpurjat. It’s also available online. I have come full circle.
Last July, I ran a pilot program. I saw a gap in the espresso segment. Third wave roasters focused only on lighter roasts and single estate coffees. Old school roasters did not care to upgrade their offering. I could align with neither. Espresso is unlike other brewing methods. It demands as much care as single estate coffees do. I have decided to focus on espresso blends.
So, I decided to learn to roast coffee beans. After the Kaapi Sashtra workshop in Bengaluru, I worked on three things. One, relearning about coffee. Two, start roasting and cupping. Three, start a coffee space.
I am nearing roasting my 75th batch. I am learning to cup better. There is no shortcut to roasting good coffee. At Shack HQ in Shahpurjat, we are nearing to serve 200th order. I have also started to press Italian panini.
Shack Coffee Co. has three offerings.
1. Espresso Bar: Monday - Friday ( 11am -5pm)
I pull espressos, and struggle with latte art. The menu has just five coffees and one eatable.

2. Coffee Satsang: Saturday ( 12pm -3pm)
An espresso workshop + tasting menu. Each guest will get to see the magic of different types of espressos, with different types of beans. And, then I make coffees and press panini.
