Shack Coffee is open
What started as a pursuit for an espresso bar, is becoming a bit of both, brewing bar and espresso bar.
But, first about manual bar. At first, I had no plans for brewing filter coffee. The kind of geeking out goes around manual brewing methods, I was scared to offer it to the people. Then Kapil came to the rescue. While I was arraning money for the espresso machine and the grinder, my old co-worker, who also trained to be a coffee brewer, suggested to not wait. Instead, we should be brewing coffees the way we used to in ‘Coffee Satsangs’.
We already had all the brewing equipment
Clever brewer, Bodum French presses, V60 pour overs, Aropresses, Hario’s vacpot and the good old Melitta’s cone with Swissgold filters. But, I wanted to focus on consistency and taste. I zeroed on Clever brewer. It is one of the most underrated brewers. Every time one gets the same taste, provided the beans, grind size and the water temperature are the same. Barista does not have to learn to train every muscle and nerve to pour with the exact flow rate, like the Japanese masters do. We are not there yet.
So, our default brewer is Clever brewer. Currently, we are brewing four beans blend. I have been roasting these coffees for the past eight months. I know the strenghts of these coffees. Together they become even better than single estate coffees. We save some coffees from the each batch to try as single estate. Last time we brewed MS Estate and Attikan.
Current timings are 2pm to 6pm on weekdays and 11am to 6pm on weekends. Kapil and I are present to brew coffee for you. I am dropping the location and address below. PLease feel free to ping to me at 9818040777. I would be happy to meet you.
